Chicken Sausage Pizza with Red Onion and Mushrooms

Homemade pizza is the best pizza and I will quite literally fight anyone who thinks otherwise. Don’t get me wrong, delivery, restaurant, and even frozen pizza have their place but there is absolutely nothing better than pizza you’ve made yourself. Nothing.

I like to use Trader Joe’s pizza dough because I’m short on time these days – working full-time, going to school full-time, running this blog and trying to have some sort of social life. TJ’s is great because they have three different kinds of ready-made pizza dough, you can go the classic plain dough route, or choose between whole wheat and a herb dough. They’re all great, so you really can’t make a wrong choice.

This is kind of a “what do we have in the fridge that we need to use” pizza. I like these kinds of pizzas or dishes because you can be really fun and creative with them, and the more obscure or different the ingredients are, the more creative you can be. This is maybe not my most creative pizza ever, but it is damn delicious and that’s what counts!

We’ve got Trader Joe’s chicken sausage (have I mentioned how much I love Trader Joe’s?), mushrooms, red onion and CHEESE. We’ve had some whole30 discussions at work over the last couple of weeks and there’s a basic consensus that cheese would be hard to live without. It’s pretty much it’s own, very important food group.

I could probably eat this pizza pretty frequently. It’s easy, tastes great and has a perfectly baked crust. Just typing about it now makes me wish I could have a bite. Or a slice.

Chicken Sausage Pizza with Red Onion and Mushrooms

Prep Time: 15 minutes

Cook Time: 30 minutes

Total Time: 45 minutes

Yield: 2 small pizzas

Ingredients

  • 1 bag Trader Joe's pizza dough, divided in half
  • Pizza sauce
  • 2 cups shredded cheddar and mozzarella
  • 2-3 chicken sausages, diced and sautéed
  • 1/2 red onion, diced
  • 1 1/2 cups sliced mushrooms

Instructions

  1. Heat pizza stone or oven to 500°F.
  2. Sprinkle a pizza peel with some flour. Shape one half of the dough and place it on the peel (if cooking the pizza in the oven, lightly spray with cooking spray and assemble the pizza directly on the tray). Spread some pizza sauce over it and sprinkle over 3/4 cup cheese, followed by half of the cooked sausage, half of the red onion and half of the sliced mushrooms. Sprinkle with 1/4 cup cheese.
  3. Transfer pizza to the pizza stone and cook for 13-15 minutes, until fully cooked.
  4. Repeat the process with the remaining ingredients and enjoy!
